These edamame poppers are the best little nuggets to eat when you’re craving fried bar snacks! Since they AREN’T fried, and are packed with protein, you won’t regret them as a late night snack!!
They’re best right out of the warm oven and dipped in a ranch sauce (chipotle ranch is amazing) or wasabi sauce.
You can also use this recipe on almost any other veggie: green beans, okra, etc.!
What you’ll need:
-1.5 cups frozen edamame, shelled
-3/4 cup flour
-1/2 tsp salt + a pinch cayenne pepper
-1 cup Panko breadcrumbs
-1/2 cup grated Parmesan cheese
What to do:
- Cook edamame according to package. I find the easiest way is to put it in a 2 cup measuring dish, cover with water, and microwave 5 minutes.
Drain edamame. In a medium bowl, whisk the 2 eggs. In another large bowl, combine Panko and parmesan. Set both bowls aside.
Place drained edamame in a medium bowl and toss with flour, salt, and cayenne.
Transfer 1/2 the floured edamame to the egg mixture. Use a slotted spoon to remove them, and toss in the Panko mixture.
Once the edamame have been “triple dipped”, ️spread them out on a parchment lined baking sheet. Try to spread them out as much as possible. it should look like this, but with some more Panko (I ran out):
Repeat with the remaining edamame.
Bake at 400 degrees for 10-12 minutes, until golden and crispy. Dunk em in the sauce of your choice and eat up!!
